The Fish Express Story
The idea arose with two guys who love to catch and eat fish – Kevin loves to catch fish and Joe loves to eat fish ! They decided to partner up and bring Marquette something different when it comes to a food truck that fits in perfectly with our beautiful Lake Superior, Marquette’s small-town atmosphere with food that is fresh and local.
Kevin Bray went to school in the mid 90s in the culinary program at NMU – then went to CIA (Culinary Institute of America in New York). Chef spent 8 years at Northern Lakes Seafood, an upscale restaurant in the Detroit area before returning to Marquette in 2015. Cooking is one of his passions and fishing is the other and both come together in the FISH EXPRESS. Chef has created a menu of fresh local fish speializing in Whitefish. His menu is simple and also incorporates a few non-fish items. Chef will be introducing more items as he gets depending on what becomes available.
Joe Constance is a local entrepreneur who has owned several local restaurants including Big Al’s, Amigos and Iron Bay Restaurant in downtown Marquette. Kevin says the only thing that has scared him so far is seeing Joe in the kitchen trying to cook so we have agreed that won’t happen again!
FISH EXPRESS has moved from the food truck into a permanent location in the Third Street Market Place (Former Valle Supermarket) in Marquette. There is a casual dining room as well as a window that you can order directly from inside located at 1034 N. Third Street Phone 906-362-3474.
